When it’s cold outside, the last thing I want is some ice frozen smoothie, cold dairy free yogurt, or chilled protein shake! I need something that’s going to warm me to my bones first thing in the morning.
After some hot coffee with almond creamer, there’s nothing like warming up a slice of crustless spinach, mushroom, turkey bacon, and goat cheese quiche!
For a special surprise, the goat cheese has a cranberry coating on the outside.
The trick making sure your Quiche is packed with flavor, is to season every layer was salt and pepper. So first sauté the mushrooms in a cast-iron skillet, then add diced turkey bacon, add your bag of baby spinach and wilt, and be sure to season that layer with salt and pepper.
To make your egg base, crack a dozen eggs into a bowl, add salt pepper and a few dashes of some hot sauce of your choice, and mix well.
Using a 9” cast iron skillet, pour the egg mix followed by the mushroom mix and add dollops of goat cheese throughout. Bake in a 400° F oven for about 20 minutes if the cast-iron skillet is already hot.
You’ll know it’s finished when the egg puffs up and is firm when you give it a little shake. Allow to cool before cutting into 8 slices.
This is surely a breakfast you can eat all week, and warm it up each morning for a hearty, bone warming meal.
